Veggie & Hummus Wraps

I'll be honest with you, I always thought vegetarians were missing out on some great tasting stuff.  Bacon, lunch meat, chicken, steak... the list goes on and on.  And I've shied away from trying so-called "vegetarian" meals because, to me, they always seemed to be missing something.

But this wrap, has proven me wrong.  I found it while browsing on Pintrest a few months ago, and decided to start trying it for lunch last month.  This recipe comes from the blog "Sweet and Savory"




The basic idea here is to use vegetables that represent every color of the rainbow.  I chose to use red and yellow peppers, carrots, celery, kale and purple cabbage.  I piled them onto a whole wheat tortilla slathered in a serving of plain hummus (2 tablespoons)


Roll that bad boy up, and chow down.  I like to add some fruit to this meal to get a serving or two of that in as well.  I think those vegetarians had it right, this is a delicious lunch, and it makes me feel really good after I eat it (probably because I'm getting a good mix of veggies)
