Today's recipe was one I picked up from Safeway's deli and decided to try and re-create at home. It's their Apple, Chicken and Walnut Harvest Salad. It's pretty good, and not too many calories. I couldn't find an image from Safeway worthy of posting here, so my lovely pictures will just have to do!
2 cups of Mixed-Spring Lettuce
1 cup of Red Leaf Lettuce
1/2 of an Apple, cubbed (choose your favorite kind)
1-2 ounces of Carrots, shaved or chopped
1/2 a Chicken Breast also cubbed
2 tablespoons of Walnuts, chopped
1-2 tablespoons of Gorgonzola, crumbled
1 tablespoon of Crasins
Ken's Light Sweet Vidalia Onion Dressing (1 serving)
Mix the lettuce together.
Add carrots, apples, chicken, nuts, cheese and crasins. Drizzle
dressing over and chow down. I love the different flavors that mix
together in this salad. I hope you enjoy it too!
